Rezept für Zwiebelkuchen

Zwiebelkuchen

Letztes Wochenende gab es bei uns daheim leckeren Zwiebelkuchen. Offenbar ist der Zwiebelkuchen so gut angekommen, dass die Freundin nach dem Rezept gefragt wurde…

Hier ist es also:

Zutaten für eine Springform:

  • 8 Zwiebeln ca. (700 g)
  • 150 g durchwachsener Speck (gewürfelt)
  • 200 g mittelalter Gouda (gerieben)
  • 125 g Butter
  • 1 Becher Yoghurt
  • 3 Eier
  • 250 g Quark
  • 250 ml Sahne
  • 250 g Mehl
  • 130 ml Wasser
  • Ein Teelöffel Kümmel
  • Vier Teelöffel Speisestärke

Zubereitung:

Teig:

Das Mehl locker in eine Schüssel geben und den Quark in kleinen Portionen damit vermischen. Wasser und Salz dazugeben und alles zu einem glatten Teig kneten. Anschliessend muss der Teig eine Stunde lang im Kühlschrank ruhen.

In dieser Zeit kann man den Belag zubereiten:

Die geschälten und gewürfelten Zwiebeln in der Butter glasig dünsten. Sie sollten dabei nicht komplett weich werden sondern ihren Biss behalten. Anschliessend abkühlen lassen.

Den Speck würfeln. Sahne, Yoghurt, Eier, Gewürz und Stärke miteinander vermischen (evtl. kann man auch noch ein oder zwei gequetschte Knoblauchzehen mit dazu geben).

Den Teig auf einer gemehlten Arbeitsfläche ausrollen und eine Springform mit eingefettetem Backpapier auslegen. Teig in die Form geben und einen Teigstreifen an den Rand der Form drücken.

Zwiebeln gleichmäßig auf dem Teig verteilen und mit dem geriebenem Käse bestreuen. Darüber dann die Sahne-Masse geben.

Auf der unteren Schiene in den vorgeheizten Backofen stellen und bei 250 Grad 25 Minuten backen bis der Kuchen hübsch goldgelb ist.

Dazu ein leckeres Glas Federweißer

Hier das Rezept für meinen absoluten Lieblingskuchen.

Das Original habe ich offenbar um 1986 herum, kurz nach Erlernen der vereinfachten Ausgangsschrift zu Papier gebracht und ich kann euch sagen, bis heute ist meine Handschrift nicht wesentlich besser geworden…

Kindergartenkrümelkuchen - das Originalrezept

Nur gut, dass es Tastaturen gibt.

Man nehme:

  • 3 Tassen1 Zucker
  • 4 Tassen Mehl
  • 5 Eier
  • 4 Esslöffel Kakao ohne Zucker
  • 500g Margarine
  • 1 Tasse Milch
  • 1 Packung Backpulver
  • 100g gemahlene Nüsse
  • 1 Tasse heisses Wasser

Alles cremig miteinander verquirlen, auf ein mit Backpapier ausgelegtes Backblech geben und bei 165 Grad Umluft2 20-25 Minuten im vorgeheizten Ofen backen.

Anschliessend nach Gusto mit Schokoglausur verzieren.

  1. Mit “Tasse” ist offenbar eine normale Kaffeeservice Tasse gemeint, kein Kaffeepott []
